For Biga

  • Lukewarm Water: 1 cup
  • Flour: 2 cups
  • Dry Yeast: 1 tsp

For The Dough

  • Water: 2 cups
  • Flour: 5-6 cups
  • Salt: ¼ teaspoon

Step-by-Step Process of Making Ciabatta Bread

Start with making biga. The process is very simple. Take a bowl and mix the flour, dry yeast, and wate. Wait for 12-24 hours before making the dough. It makes the biga perfect.

Let’s move to the second step, which is preparing the dough. Once the dough for the ciabatta has fermented for at least 12 hours, mix the biga with the remaining ingredients. The thin dough for ciabatta contains water, wheat, yeast, and salt.

Use a wooden spoon to combine each ingredient. Avoid feeling obligated to add more flour or water. It will initially seem dirty, but then it will look too damp.
